My Mum’s green apple fritters

Pancakes and fritters have always been more of an afternoon or morning tea snack than a breakfast staple in our household. Eaten warm or cold with a sprinkling of caster sugar, my Mum’s apple fritters have remained my all time favourite!

When I asked Mum for her apple fritter recipe she said she would need to make them again and actually measure all the ingredients out this time, because she never has. Ha! So, I waited a couple of days and then she called and passed the recipe on. Not to mention that Dad was happy because they are his favourites too!

The fritters are nicely thick with a hint of apple pie flavours from the vanilla, cinnamon and green apples which are only slightly cooked in the process, retaining some of the gorgeous tartiness they have when raw.

If you like your fritters for afternoon or morning tea, simply serve them with a sprinkling of caster sugar or hazelnut whipped cream. But if you prefer your pancakes for breakfast, serve them with a dollop of ricotta and raspberry coulis – delicious.

My Mum’s green apple fritters

These fritters will keep well in the fridge for upto 5 days, heat up in the microwave or eat cold. Great with lemon juice or sugar. If you like a breakfast version, serve with a dollop of ricotta and raspberry coulis.

  • 3-4 Granny Smith apples
  • 2 eggs
  • 400ml milk
  • 300ml buttermilk
  • Plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon sugar
  • Pinch of salt
  • Olive or coconut oil, for frying

Peel, core and slice apples.

Beat eggs with 50ml milk, add buttermilk, and flour a tablespoon at a time, mixing with a whisk. Keep adding sweet milk and flour until the mixture has reached yoghurt consistency. Add baking powder, vanilla, cinnamon sugar and salt.

Heat a large non-stick frying pan, greased with a little vegetable oil. Dip each apple slice in the batter and scoop up with a shallow ladle. Pop into the frypan, and cook in batches till air bubbles start popping on one side, then flip and brown the other side.

Place on a platter, allow to cool and sprinkle with a touch of unrefined sugar or granulated stevia. Repeat with the rest.

Please thank your mum for me! These look absolutely scrumptious!! I will definitely be making these :) my mum used to always make pikelets for afternoon tea after school. With jam. I loved it.
