I don’t often blog about breakfast, mainly because I go through very long phases of having the same thing, with a break of a bacon and egg style fare here or there on weekends. But, I’ve decided to share my current long phase favourite, the breakfast trifle, because it’s extremely adaptable and just so good, not only in terms of taste but also when it comes to nutritional balance.
Ok, time to name drop and not because I must, but because the following ingredients are the least processed and most additive free. But feel free to use your own favourites if you like. I use untoasted rolled oats and dried young coconut flakes as my base (my Mum is a muesli fanatic and discovered this lovely combination while visiting in Jan). It is not as sweet as granola or toasted muesli and you can adjust the sweetness by simply adding dried fruit – I like papaya, pineapple and raisins.
And I cannot go past a big pot of Jalna’s pot set vanilla yoghurt, and neither should you. Unlike many other yoghurts, which contain gelatin and other thickeners, Jalna’s yoghurt is different as it contains only milk, natural flavours and fruit juice or purees in fruit varieties plus a whole heap of good acidophillus bifidus bacteria. It is so beautifully thick and creamy without the added nasties – very good for you.
Last, but not least there’s berries. Fresh in season, frozen ones outside. I also like to add banana or the recently discovered combination of lemongrass and ginger tea poached pears.
The trifle is great as a special occasion breakfast (think Mother’s Day breakfast in bed) or even as a light night supper if you eat your dinner early.
Serves 1
Breakfast trifle: Young coconut, home made muesli and berries
You can mix and match your ingredients to your heart’s (and bellies’) desire. To avoid extra additives and preservatives always go for pot-set yoghurt and try making a large batch of your own muesli at home. This way too, you can pick what goes in it and what stays out.
- 9 tbsp pot set yoghurt (I use Jalna’s Vanilla yoghurt)
- 1/2 cup berries of your choice
- 1/2 cup muesli*
- 1 tbsp LSA
- 1 tbsp young coconut shavings (coconut chips)
To make your own muesli
- 1/4 cup rolled oats
- 1 tbsp unroasted peanuts
- 1 tbsp bran
- 1 tbsp young coconut shavings (coconut chips)
- 1 tbsp diced dried fruit
- 1 tsp sunflower seeds
Layer 3 tablespoons of yoghurt, sprinkle with muesli, LSA and diced berries in a glass. Repeat twice more. Top with extra berries, coconut shavings and sprinkle with LSA to serve.

Thanks for the link, I’ve been looking for coconut flakes for a while. Lemongrass and ginger tea poached pears sound like a great breakfast/dessert add-on, I’ll give them a try!
I made the pears the other day to pop on top of a chocolate ganache mousse tarts – yum. I had one left over and used it in this combination. It was great!
