Chocolate, peanuts, marshmallows, coconut and lollie snakes instead of candied fruits… Who could resist?
While it may not be one of the most wholesome recipes I’ll ever post, it’s Father’s Day today and Dads deserve a yummy treat! And what could be better than a double chocolate Rocky Road? Not much if you ask me…
The following recipe is quick and easy to make, even for little kids. I’ve used the Natural Confectionery Company Snakes as they contain only natural colours and flavours, but feel free to adapt the recipe to your Dad’s likes and dislikes – chicos, liquorice and other nuts go just as well with chocolate, especially milk.
The Rocky Road stores well in the pantry, so Dad can enjoy it over the next couple of weeks, if it gets a chance to last that long that is…
Serves 16
Milk and white chocolate Rocky Road
To make this recipe slightly more wholesome use unroasted peanuts, white marshmallows and naturally coloured and flavoured snakes.
- 200g milk chocolate, broken up into pieces
- 200g white chocolate, broken up into pieces
For the filling you will need 2 lots of:
- 6 lollie snakes, chopped into 2cm pieces (I used the Natural Confectionery Co snakes)
- 8 marshmallows
- 50g peanuts
- 40g desiccated coconut
To make milk chocolate Rocky Road: Line 1 loaf tin with non-stick baking paper.
Place milk chocolate in a microwave-safe bowl. Microwave on medium for 1 minute. Stir until chocolate is completely melted and smooth.
Add 1 lot of all the filling ingredients and mix well until combined. Pour mixture into the lined loaf tin and refrigerate until set (~2 hours).
To make white chocolate Rocky Road: Line 1 loaf tin with non-stick baking paper.
Place white chocolate in a microwave-safe bowl. Microwave on medium for 1 minute. Stir until chocolate is completely melted and smooth.
Add 1 lot of all the filling ingredients and mix well until combined. Pour mixture into the lined loaf tin and refrigerate until set (~2 hours).
To serve: Chop into fingers or squares with a sharp straight blade knife and enjoy (responsibly)!

You can’t go wrong with rocky road. I also love to make it with red frogs and hazelnuts (instead of peanuts) for something different.
