Chilli and Beer Barbecue Pork Ribs Plus 4 Other Rib Marinades

These spicy Chilli and Beer Barbecue Pork Ribs are meltingly tender on the inside and crisp on the out. Easy to make and one of my favourite Summer finger foods.

Beer and Chilli Ribs

I know I am getting ahead of myself with a summer recipe, but as the weather starts to warm up in Sydney there is no better way to celebrate the new season than with an outdoor feast. Wouldn’t you agree? And for those of you heading into Fall, this might be the best reason to give your barbecue the last hurrah!

Last Sunday we celebrated Fathers Day with a big American-style cookout! Deliciously smoky organic beef cheeseburgers were the flavour of the day – the patties were flavoured with just a pinch of salt, pepper and a dash of Worcestershire sauce. Quick, simple and very tasty!

The smokiness of the patties reminded me of the smell of wood-smoked ribs at Hurricanes carried over to our balcony with an easterly breeze when we lived in Pyrmont. And so, it was time to get the ribs on!

While the recipe can be made a day ahead to enhance the flavours, who can wait that long when ribs are involved?! So, instead, I rubbed the ribs with spices and allowed them to infuse into the ribs for about 2 hours. Then 35 minutes in the oven and they were ready to devour. Finger-licking good!

Chilli and Beer Barbecue Pork Ribs Plus 4 Other Rib Marinades

Ingredients

For the Chilli and Beer Barbecue Pork Ribs

  • 500 g rack of pork ribs
  • 1 cup light beer

For the Chilli Spice Rub:

  • 1/2 tsp ground coriander
  • 1/2 tsp ground smoky paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp ground dried garlic
  • 1/2 tsp ground chilli (or more to taste)

For the Barbecue Glaze:

  • 1/8 cup Worcestershire sauce
  • 1/8 cup Barbecue sauce
  • 1 tbsp Ketchup
  • 1 tbsp olive oil

Instructions

To prepare the ribs:

  • Wash ribs under cold running water and pat dry with paper towels.
  • Place rack of ribs in a roasting dish.

To make the Chilli Spice Rub:

  • Combine all ingredients in a bowl and rub into both sides of the ribs.
  • Place ribs in the fridge, uncovered, and allow flavours to infuse for around 2 hours.

To bake the Ribs:

  • Preheat oven to 180C (200C fan-forced, 375F, gas mark 5).
  • Pour beer into the baking dish, under the ribs.
  • Cover the dish with aluminum foil and bake for 30 minutes on the middle shelf.

To make and apply the Barbecue Glaze:

  • Mix all Glaze ingredients in a bowl.
  • Remove ribs from the oven and discard foil. Turn oven element on to grill or preheat your outdoor barbecue.
  • Baste the ribs generously with the Glaze and grill for another 5 minutes.
  • Remove ribs from the oven or barbecue and serve.

I was just making a list of what to buy for a barbie this weekend at my sisters when your email came in. Pork ribs are on the top of my shopping list now. Could you bake them first and then reheat on the barbecue without grilling first as in recipe?

Hi Andy, yes you could. I’d recommend reheating them in the oven (covered with some extra beer) first. You could do that on the barbecue too. Then chucking the glaze on and grilling. Enjoy!

Hi, Martyna! I love your recipe.. and these photographs! Then you give us not one.. but four more recipes to try! I think it’s so cool that it is your spring.. we are heading into fall, so I will have to try these ribs next spring.. oh, who am I kidding?! I’ll have to try these long before next spring:D

As an American I wholeheartedly approve of this post. Ha! Truly, though, I am also a huge lover of ribs and with the warm weather coming in, I am so ready to fire up the grill and get cooking! I’m a devotee of my dad’s recipes but yours look delicious and I’m going to give them a try. I have no doubt they will be absolutely scrumptious.

I made them for dinner in my large crock pot (my oven is broken and my new range keeps getting back-ordered) the ribs were great anyways, after 6 hrs in the slow cooker. I could have grilled them at the end (to char the sauce a little) but it was dark out and they looked and smelled delicious (and they were!!!!) so I will definitely make them again (for company this time!!!!)
