Yesterday was a little crazy… Aside from a short sleep in, I was working to a pretty tight schedule with groceries, finishing up some recipe development for a client, taking Kasha – the puppy dog, for her afternoon play in the park and cooking dinner for people at church. I’m thankful for Mr Chipconnoisseur who brought me a coffee from his morning walk – love! In between all of this we decided to use up our Gold Class gift vouchers and, perhaps to save some time, combined lunch with a movie date. And so I stuffed my face with Peking duck pancakes at the movies, we then had exactly 17 minutes to get home and 45 minutes to cook the lasagna while taking the dog to the park at the same time. Madness! 

Quite early in the day, I also received a voicemail from a lady called Belinda who said she’d found my wallet next to her car in Lillyfield. Now, that was news to me because I hadn’t even noticed it was missing. Waiting for her to call me back must have been the longest 5 minutes of my life.

I must have left my purse in the cab on our way back home from Ms G’s and as it turned out some dishonest sod took my cash and dumped the rest… At least I had my driver’s license tucked into the back cover of my phone so I could move around town freely. Imagine the hassle of not being able to!

Anyway, after an eventful day to say the least, lots of late lunching, rushing around, cooking and exchanging boxed chocolates for my lost purse, I was in no mood to cook any more proper food. So instead, for supper, we had a small cheese, veg and dip plate served with this super easy and tasty Garlic and Shallot Skillet Bread. Aside from late suppers, it is also great served as a side to meals or as a starter at barbecues. Excess dough will keep in the fridge for up to two days and cooked bread can be kept in the fridge for around four.

Garlic and Shallot Skillet Bread

Aside from late suppers, this 5 ingredient Garlic and Shallot Skillet Bread is also great served as a side to meals or as a starter at barbecues. Excess dough will keep in the fridge for up to two days and cooked bread can be kept in the fridge for around four.

Ingredients

For the Garlic Naan Bread:

  • 1 cup plain flour plus extra for dusting
  • 1 cup boiling hot water
  • 2 sprigs sping onion chopped
  • 2 cloves garlic peeled and crushed
  • 1 tsp curry powder

For frying:

  • 2 tbsp olive oil

Instructions

To make the Naan Dough:

  • Sift flour into a mixing bowl and, using your electric mixer with dough hooks, blend in the hot water, a little at a time, until a ball of dough forms but is not too sticky.
  • Cover with a tea towel and allow to stand for 20 minutes in a cool dry place.
  • When rested, roll out the dough on a lightly floured surface, place crushed garlic, chopped shallots and sprinkle over curry powder onto the middle of the dough, fold it over and knead for a couple of minutes for the ingredients to blend in properly. Add extra flour if necessary.
  • Roll out to about 5mm thick.
  • Heat 1 tablespoon oil in a medium-sized pan on high, reduce heat to medium and cook the bread for about 3 minutes on each side. Transfer onto a cutting board and cut into slices as you would a pizza. Repeat with the remaining dough.

This bread looks amazing! I doubt after that day I could muster up anything more complicated than a bowl of cold cereal. Weetbix take me away. :) Glad you found your wallet. I’ve had mine stolen by a pickpocket and never got it back. It was before the scourge of identity theft but it was still a pain.

Yepper, I’ve lost my wallet…after I was tossed out of a taxi I dropped it on the ground. Someone returned it to me…can’t remember if it had cash in it or not.

Is this the same type of pancake that you’d find in a Chinese restaurant???

Hi Mel, yes I think it is although I’ve never tried them so I am not entirely sure whether it’s made in the same way. PS I use this pastry for dumpling skins as well… And have made the bread with feta stuffed olives and garlic before too.

Oh Martyna – What a crazy day to say the least and to lose your wallet on top of it…. such a horrible feeling. I hope you didn’t have to much cash in it. I think this garlic and shallot bread looks sensational and it would be such a nice easy dish to share as a family.. Photos are gorgeous as well. I hope you have had some time today to catch up and take a break.. x

Sorry to hear about your wallet but glad you didn’t have to get new cards etc. This skillet bread looks absolutely moreish, I would eat the whole thing in one sitting if presented with it!

I just LOVE this recipe. It looks so delicious. Sorry to hear of your lost wallet, stolen money and your crazy day.

When I was about 17 or 18 (many years ago) and living in Wollongong I treated my younger brother who was about 11 or 12 to lunch in town at a cafe. I left my purse on the table. It was a HIDEOUS furry kangaroo purse with next to no money in it and no name or address in it, so naturally I never got it back.

Have been lucky with purses ever since, thank goodness now that it is full of credit cards, driver’s licence etc and a much bigger deal to lose.

YAY! More dairy free recipes for us lactose intolerant folks! Just over the summer, I left a cute, cream color Italian brand leather clutch with crossing tortoise shell handles no less, (GoodWill purchase!), in my grocery cart, outside the market after I unloaded my groceries! Hour later after unloading my car at home, – no clutch! Back to grocery store customer service. They had it! It was spotted by a young worker coming in for his shift who turned it in. YAY for him and especially to the parents who raised him, right?! Had customer service point him out and I promptly thanked him in person and rewarded him with the remaining $10 bill that was still inside it!

We order similar bread at Taiwanese restaurant (or some other Chinese restaurant) with green onions. I love your garlic and shallot better! Simple yet I know this is so good and great snack for children after school!
