Spiced Flaxseed Schnitzel Bites

3 ingredients is all that’s required to make basic Flaxseed Schnitzels, but to lend a little kick to these juicy chicken bites I added a dash of spice and served them with a red fruit jam. Gluten-free, dairy-free, egg-free, nut-free.

When I sat down to write this post last night, it really struck me. I should start keeping a gratitude journal so that I can remember all of the things, and people, and situations, and friendships and good deeds bestowed upon me, and be thankful and give something back.

I have always been tempted to buy one, but luck had it that Mr Chipconnoisseur’s sister, K, actually gave me one to keep as a little farewell gift at the end of our weekend in Boonah.

Last night I wrote this:

1) I am grateful for Mr Chippy, the little girl and little boy – thank you for being so good, so understanding, honest, funny and supportive.

| Especially, when I promised you some baked gluten free donuts and they didn’t work out because the recipe needed more work, and thanks for eating that sugar-free cake I tested with such brave faces. I have a sweet dumpling plan to make it up to you.

2) I am grateful for you, my readers – thank you for coming to visit my blog and making me smile every time you leave a new comment, all thoughts are welcome.

3) Lastly, I am grateful for M, who has been a really good friend and who, in adopting a gluten-free diet recently, discovered that ground flaxseeds make for a great schnitzel crust and shared the idea with me.

Me? I love all those simple, uncomplicated recipes that are made with 5 ingredients or less. Many of them are quite ingenious, as is the case with this one. Now, I’ve used a mixture of paprika, chilli, ginger and cumin in mine, but any dried, ground spice mix would work here as well; Chinese five spice, Middle Eastern Zataar, Sichuan salt and pepper or a simple Italian dried herb mix. Spiced Flaxseed Schnitzel Bites

I've used chicken thighs in this recipe because I find they don;t dry out as easily as breast meat, but you can use 1 breast in this recipe if you prefer. In terms of spices, I made up a mixture of paprika, chilli, ginger and cumin in mine, but any dried, ground spice mix would work here as well; Chinese five spice, Middle Eastern Zataar, Sichuan salt and pepper or a simple Italian dried herb mix. to find out more about flaxseed go here.

Ingredients

For the Spiced Flaxseed Schnitzel Bites:

  • 2 organic chicken thighs or 1 chicken breast
  • 1/4 cup ground flaxseed I used brown
  • 1 tsp each paprika, ground ginger, ground cumin
  • pinch chilli
  • 2-3 tbsp olive oil

To serve:

  • lemon cheek
  • red fruit (raspberry or lingonberry) jam

Instructions

To make the Spiced Flaxseed Schnitzel Bites:

  • Trim chicken meat of excess fat. Cut into 1 inch-sized pieces.
  • Place ground flaxseed and spices in a medium bowl and mix well to combine.
  • Add chicken pieces to the spiced flaxseed mixture and toss until pieces are covered thoroughly with the mix.
  • Heat oil in a large pan over medium-high heat. Add chicken to the pan and cook, for about 3 minutes, on each side.
  • Remove from pan and arrange on a serving platter.

To serve the Spiced Flaxseed Schnitzel Bites:

  • Serve Spiced Flaxseed Schnitzel Bites with a lemon cheek and some red fruit jam on the side.

My husband would adore these!! He loves schnitzel.

Gratitude journals are a wonderful thing. I have a gratitude journal app on my iPad and love flicking back through reading all the things I’m grateful for. It’s an especially great thing to do when you’re having a bad day.

do you cook them for him? i always wonder how vegetarians and non-vegetarians live harmoniously together. i think i would struggle if my husband wanted to eat meat and i didn’t.

Yes, I do – neither of us are stricly speaking vegan or vegetarian. We try to go meatless 3-4 times a week and while many of our favourite dishes are meat-free, I can’t see us turning vego just yet.But I’ve heard or very strict vegetarians who have their own cutting boards, pots, pans, etc… Not sure what Jen’s stance on this is.

I really like this Marty, it’s pretty fuss free and sounds fairly clean to make. Great idea. Recently I have been most grateful for good health and a new job which is a fantastic change to where I was previously. It makes such a big difference.

Yes, they are. I omitted them from the recipe as they were there for just a little contrast, but they are tasty so feel free to add them to the dish.

These look really good! Although definitely not gluten-free, I’d love to try this with a seitan, or maybe some super-marinated, already grilled, flavoured tofu. I thought that flaxseeds were not good for you when heated, though? But perhaps that’s just not *as* good for you.. Thanks for the recipe.

According to WHFoods they are safe to be heated and there is no diminishing nutrition when exposed to heat. Tofu would be nice too!

Looks also appetizing, but have read during the previous week from a number of blogs that flaxseed is not on the agenda, and, indeed, is supposed to be on the banned-list in Australia. Interesting to know the truth – have not had the time to find out! Since I prefer not to fry any food, I guess the answer is but academic :) !

Thanks for bringing this up Eha, I’ve not heard of it being banned and I do recognise that while these are fried they may not appeal to everyone but I have a feeling they could be baked (not tested this). Will have to look into the flax story.

Looks wonderfully easy and delicious. I got a bag of flaxseed and this sounds like a great meal to start with. I’ve never heard of gratitude journal until today but I think it’s a wonderful way to appreciate small things in life which we tend to forget or not pay attention. It’s something I want to teach my children too. :)

They look so much better than chicken nuggets ;-) And very original too. I love the idea to add flaxseeds (I love them in bread but don’t use them really as often as I would like). The gratitute journal is something I have never heard about, but such a wonderful idea.
