My first ever overflowing smoothie in a jar… I kind of get it, but I absolutely adore the hidden goodness and flavour of this blueberries and cream inspired mixed berry smoothie.

My first overflowing smoothie in a jar was a hidden goodness concoction of blue and blackberries, avocado, coconut, banana and chia pudding with raw almonds. Inspired by my trainer’s fifteen year old daughter who is very much into learning all about common-sense clean eating and healthy treats (how awesome is she?). And by Zac who recently “caught me” sneaking avocado into his favourite breakfast smoothie!

Of course, this would work just as well in a glass, but jars are a little more whimsical. Whether they’re here to stay is a topic for a different discussion.

Hidden Goodness Mixed Berry Smoothie

If you're not into berries, you can make it with banana and cacao or orange fruit such as mangoes, rockmelon (cantaloupe) and papaya - all of which are great for eye-health just make sure you have them with a little fat because lutein, vitamin E and zeaxanthin are best absorbed in the presence of fats. Hence the coconut flesh and avocado addition.

Ingredients

Overflowing Smoothie in a Jar

  • 1/4 cup blueberries
  • 1/4 cup blackberries
  • 1/4 small avocado
  • 1 small banana I use frozen chunks
  • 2 tablespoons flesh from a young coconut
  • 2 tablespoons chia seeds
  • 1 cup water

To serve:

  • a few extra berries
  • a few raw almonds

Instructions

  • Place all Smoothie ingredients in a blender and process until smooth. Transfer to a jar, top with extra berries and almonds. Enjoy!
