Spiced Flaxseed Schnitzel Bites
I've used chicken thighs in this recipe because I find they don;t dry out as easily as breast meat, but you can use 1 breast in this recipe if you prefer. In terms of spices, I made up a mixture of paprika, chilli, ginger and cumin in mine, but any dried, ground spice mix would work here as well; Chinese five spice, Middle Eastern Zataar, Sichuan salt and pepper or a simple Italian dried herb mix. to find out more about flaxseed go here.

For the Spiced Flaxseed Schnitzel Bites:
- 2 organic chicken thighs or 1 chicken breast
- 1/4 cup ground flaxseed I used brown
- 1 tsp each paprika, ground ginger, ground cumin
- pinch chilli
- 2-3 tbsp olive oil
To serve:
- lemon cheek
- red fruit (raspberry or lingonberry) jam
To make the Spiced Flaxseed Schnitzel Bites:
Trim chicken meat of excess fat. Cut into 1 inch-sized pieces.
Place ground flaxseed and spices in a medium bowl and mix well to combine.
Add chicken pieces to the spiced flaxseed mixture and toss until pieces are covered thoroughly with the mix.
Heat oil in a large pan over medium-high heat. Add chicken to the pan and cook, for about 3 minutes, on each side.
Remove from pan and arrange on a serving platter.
To serve the Spiced Flaxseed Schnitzel Bites:
