I love a good Mexican salad: shredded lettuce, beans, corn, taco-flavoured minced beef, cheese, pico de gallo, guacamole, sour cream and totopos.

Chicken fajitas! We have Mexican Mondays where the family and guests get to build their own meal and we chat and usually play board games or cards after dinner. It’s just so fun and relaxing and it’s flexible enough for everyone to have their desired level of spice

I love to make tacos when the grandkids visit. Mince with taco seasoning, beans, avocado, shredded lettuce and tomato, grated cheese…All set out so the kids can help themselves. Fairly ordinary as Mexican food goes but tasty, delicious and fun (messy too!)

My favourite Mexican food is Sopa de fideo. It is a very comforting and nourishing soup, that comes together quite quickly and tastes amazing. Perfect if you feel under the weather and need a little pick me up.

I love all Mexican food. If I am in Mexico, I love to have chilaquiles for breakfast. Having leftovers from the day before with tortillas made into chips, chicken, onion, sauce and cheese. One of the best breakfasts around. Makes me think I should be sitting in Mexico rather than Michigan.

When I was in Mexico my most memorable meal was (unidentified) fish ceviche served on tostadas as a half time snack during a soccer game with the local kids. It was citrusy and fresh with a lovely contrast between the soft fish and crunchy tostada. I now can’t go past ceviche whenever I see it on a menu

Chicken Enchiladas with Tomato Salsa. Packed with flavour (any leftovers taste great the next day). We love to make them together as a family. Delicious!!!

Tacos! We have Taco Tuesday. Everything is chopped up and served on a platter in the middle of the table so everyone can build their own. It’s a perfect meal especially after a busy evening of sports/classes because everything can be prepared in advance.

It’s hard to choose a favourite, but probably tacos. I love that you put all the ingredients out and everyone gathers around to fill up their taco shell and make their own combinations. When I was a kid I loved how free it felt to decide what and how much of everything to put in.

My favourite is refried bean salad, warmed beans piled with capsicum, chilies, coriander, avocado, salsa, smothered in lime and crispy tortilla chips. Fast, healthy and delicious!

Huitaloche – it’s a mushroom kind of fungus stuff, also called corn smut, that is an amazing weird and wonderful food. High in b 12 . You can’t get it in Australia I wouldn’t think, and even in the USA it’s only available canned. Ugly as all hell, but it’s great stuff! Good addition to tortilla wraps, tacos etc.

I love an authentic mexican mole. Especially after I was lucky enough to fulfill a dream and spent a few months living and traveling around Mexico in 2008… Yep, eating Mole and much more!

Mole is such a delicious sauce that is made from rich chocolate, nuts and the magic of lots of chillies and spices then served over meat….

I also love the story behind its existence… A bishop was said to have visited a nunnery and the nuns had nothing prepared to offer him to eat. The nuns are alleged to have popped all the ingredients they had into a pot, they served it over chicken and mole was born! ☺ YUM

My fresh homemade guacamole with blended avocados, lime juice, minced chilli, garlic and spring onions is absolutely delicious every time. Served with chopped coriander and dipped in to with crunchy oven baked pita chips, this Mexican favourite is a true winner!

I love homemade nachos, crispy corn chips sprinkled with freshly shredded cheddar, tomato salsa with a touch of chili, a dollop of sour cream and homemade guacamole (avocado, red onion, touch of lemon juice, salt & pepper. Literally the perfect home style night at the movies!

I love Mexican food, I would love to try my hand at cooking some at home, I reckon Mexico would be an amazing place to travel to, especially away from border towns, I would want to go further inland to the real Mexico, that’s how I imagine it is, beautiful!!!!!!

A good Mexican chili! It is versatile, healthy (if you make it from scratch), vegetarian friendly, and generally just delicious! Can be served with so many different sides, like, cornbread, rice, sweet potato, corn chips. And don’t forget to top it off with coriander, and maybe a dash of greek yoghurt!

Huevo Rancheros! The delicious spicy Mexican egg dish is perfect for breakfast or a quick and delicious lunch or dinner ( as an easy alternative to take-away:) My family all enjoy it and it’s actually very healthy too!

My favourite Mexican recipe is Chicken fajitas with a lime salsa, combining lime and a black bean salsa with chipotle BBQ chicken. Served with warm tortillas, sour cream and avocado this is always a hit with friends.

Cheesy Beef Quesadillas, dipped in Guacamole to heighten the taste sensation. I could seriously eat them non stop, day in, day out, for breakfast, lunch, dinner and snacks too. For my gluttony towards my favourite Mexican dish I am very thankful for my lean gene.

I love Mexican Picadillo! I use it to fill empanadas, chiles rellenos, tamales, tacos, stuffed potatoes list is endless, so tasty and so many uses. Place a spoonful of picadillo into a hot corn tortilla. Voilá! An instant (and delicious) taco.

Tacos are a favourite at my house. They taste amazing and are one of the few meals I can guarantee will all get eaten. Everyone can put on theirs what they like. My kids like to keep theirs more basic, my husband loves to add hot sauce. Everyone is happy when it’s Taco Night.

There is nothing better than fajitas, so tasty and versatile, everyone can have theirs however they want and with sides/dips like salsa, guacamole and queso – everything is delicious, fresh and healthy! Only other addition to make it perfect is great friends and margaritas! Thanks!

The best paella dish that I ever had was while backpacking in Mexico. My mate’s parents cook a mean Mexican Paella, served with plenty of local spices, tiger prawns, mussels, laughter, oodles of saffron, lots of sauces like guacamole a salsa, squeeze of lemon, complete with plenty of heated passion and round robin taste testing. The spontaneous flavour intensifies as time goes, allowing the flavour to sizzle. Enjoy with a glass of Chardonnay Casa Grande… heaven!

When we out at Mexican I always have the Burrito Del Mar which has lovely creamy prawns in it, but am also very partial to a quesadilla or two. In fact I love all mexican food !
