Stir Fry Collab with P’Nut Street Noodles

Inspired by light and fresh summer flavours my Summer Pineapple Stir Fry is available from P’nut Street Noodles in Balmain until the end of December.

When it comes to takeaway Asian food I’m after delicious flavours and value for money. When I was approached to collaborate on a dish with the popular Asian eatery P’Nut Street Noodles, I jumped on the opportunity.

Why? Because their food ticks ALL the right boxes, seriously.

The folks over at P’nut know how to make authentic South East Asian flavours pop! They also make all their delicious sauces from scratch, so you know you’re getting fresh and authentic flavours. All their meals are also packed with veggies. And you get that authentic fire wok flavour. You know the one I’m talking about right? Yum!

I wanted to create a dish that would be synonymous with summer. So, adding a burst of pineapple flavour to the stir fry was a no brainer. An idea, inspired by a traditional pineapple duck (or quail and pineapple) curry but made lighter with chicken and lots of veg, ideal for summer.

Whilst I like my stir-fries on the spicy side, I wanted to make this dish more of a family-friendly favourite. Most kids love chicken, rice and of course juicy chunks of pineapple. Delicious veggies and sauce are just a bonus. Perfect for a post-Christmas summer lunch or dinner.

The dish can also be made vegetarian – dotted with extra carrots, onion, broccoli and white funghi. If you prefer your stir-fries spicier you can always ask the chefs to turn up the chilli in yours.
